Chicken and Wild Rice Soup

Chicken and Wild Rice Soup

This healthy chicken and wild rice soup has no cream or milk, and only a handful of ingredients made in one pot! It’s easy to make, freezer friendly, and great for meal prep. At only 212 calories per serving it’s a low-calorie, comforting soup to make for cold days.

Is there ever a bad occasion for chicken soup? It’s great when you’re sick, when you’re healthy, when you’re cold, when you’re a kid, and when you’re an adult. I don’t think there is another meal as soul-satisfying, easy to make, and simple as chicken soup.

This version of chicken soup with wild rice is simple and tasty. It has all the classic tastes of traditional chicken soup with a bit of an earthy, nutty flavor and deliciously chewy texture from the addition of wild rice.

Most chicken wild rice soups have a thick, creamy base, but this version has no cream. It’s healthier and lighter than other recipes, and easily adaptable to be 100% dairy free.

Ingredients and Substitutions

  • Butter – use olive oil or ghee for a dairy-free option.

Chicken Gnocchi Soup

Chicken Gnocchi Soup

You can make this easy Chicken and Gnocchi Soup recipe at home in only 20 minutes – no need to go to the Olive Garden! It’s creamy and luscious and the ultimate comfort food, loaded with veggies including spinach, with herbs, shredded chicken, and pillowy potato gnocchi. Stirring parmesan cheese in at the end makes the soup extra thick and flavorful and packed with Italian flavor!

If you’re looking for a comforting soup for a cold night, look no further. This chicken gnocchi soup has all the flavors of chicken pot pie, with an Italian twist, but it’s SO much easier to make.

This soup is quite similar to my chicken and dumplings (you all LOVE that recipe with over 100 five-star ratings!), but this one is even faster and easier because you use prepared gnocchi instead of making dumplings from scratch!

You’re going to love the flavor of thyme and oregano, the creamy and luscious thick texture, and the rich flavor of this chicken gnocchi soup. Not to mention how QUICKLY it comes together when you use store-bought gnocchi (which cooks in three minutes) and pre-cooked shredded chicken!

Homemade Pumpkin Pie Spice Mix

Homemade Pumpkin Pie Spice Mix

Making Homemade Pumpkin Pie Spice Mix is not only tastier and cheaper than buying the store-bought stuff – it only takes 5 minutes, and you probably already have the 5 ingredients you need! Use this homemade pumpkin spice recipe for pies, cookies, oatmeal, lattes, or even chili.

I love using pumpkin pie spice mix in the fall, and if I’m being honest, year-round! But those tiny, overpriced jars of pumpkin pie spice you buy at the store are easy to go through quickly.

Making your own homemade pumpkin pie spice mix can save you money, and is also good for the environment (no tearing through all those tiny plastic containers!). And this pumpkin spice mix has 5 ingredients – all warm, aromatic, fragrant spices that are the perfect thing to elevate any fall-inspired recipe.

Ingredients in Pumpkin Pie Spice

  • Cinnamon
  • Ginger
  • Nutmeg
  • Allspice
  • Cloves

All of these spices should be ground, but you can grind them yourself if you prefer (see more about this below).

Pumpkin French Toast Casserole

Pumpkin French Toast Casserole

This Pumpkin French Toast Casserole is the perfect make-ahead breakfast or brunch recipe! Assemble and refrigerate overnight (or, bake right away) for a fuss-free and impressive festive fall breakfast recipe that’s perfect all season long or for Thanksgiving or Christmas morning. Torn bread is soaked in a pumpkin-based custard with warming spices and is topped with a pecan streusel crumble, then baked.

Similar to bread pudding or a strata, French toast casserole has a base of bread (preferably stale), smothered in a custard, and baked until firm.

This Pumpkin French toast casserole is packed with warming spices from pumpkin pie spice mix, and has pumpkin puree mixed into the custard. Topped with a sweet and crunchy pecan streusel, this decadent breakfast will be a family favorite!

Once you make a French toast casserole, you may never go back to make French toast the traditional way. It’s super convenient to assemble this all in one dish and bake at your convenience, rather than standing over a hot skillet making individual pieces of French toast.

Homemade BBQ Sauce

Homemade BBQ Sauce

Homemade BBQ Sauce takes only 5 minutes to make with pantry ingredients you probably already have, so it’s a great way to save money, and it’s absolutely delicious! This thick barbecue sauce recipe has tang from apple cider vinegar and mustard, sweetness from brown sugar, with a base of ketchup and a secret ingredient for a salty, savory punch. Use it as a dip or in any favorite BBQ recipe!

OK I’ll just tell you- the secret ingredient is soy sauce! Many recipes use Worcestershire sauce in homemade BBQ sauces, but I never have any around, so I used soy sauce instead.

The soy sauce is used instead of salt, and it’s a great vegetarian substitute for Worcestershire sauce in barbecue sauce (Worcestershire has anchovies, so it’s not vegetarian). So you can rest assured this homemade BBQ sauce recipe is vegetarian (vegan, too!).

Use this BBQ sauce when making oven baked bbq chicken or oven bbq salmon, or as a dip with homemade chicken nuggets. You can even use it as a pizza sauce on bbq chicken pizza!

Oven BBQ Salmon

Oven BBQ Salmon

This Oven BBQ Salmon is baked in the oven to flaky, tender perfection with a thick, caramelized BBQ glaze on top with only TWO ingredients – salmon and barbecue sauce (plus a little oil, salt, and pepper). You’re going to love this easy 15 minute recipe, and since you use the broiler it’s even faster than regular baking!

You all LOVE my Oven BBQ Chicken recipe– it’s been one of my top posts for years and has over 200 five-star reviews. The trick lies in the basting technique, which I adapted for this oven-broiled BBQ salmon recipe.

But the thing I love about this BBQ salmon as opposed to chicken? It’s healthier, it’s less messy (since chicken grease gets everywhere), and it takes MUCH less time.

You only need about 10 minutes of cooking time and 5 minutes of prep for this BBQ salmon recipe. You’ll need to take it out of the oven to baste with BBQ sauce a couple of times, which results in a thick, sticky sweet, deliciously caramelized layer on top of the salmon.

Homemade Baked Tortilla Chips

Homemade Baked Tortilla Chips

Homemade tortilla chips baked in the oven with just a little olive oil and salt cook up to crispy perfection! Squeeze a little fresh lime juice when they come out for a boost of flavor, and serve with your favorite salsa, dip, or use them to make nachos. All you need is some corn tortillas and 15 minutes!

If you have some corn tortillas hanging out in your fridge, this is a great way to use them up. You can have delicious, golden, crispy, thick homemade tortilla chips in only a few minutes.

I love store-bought tortilla chips out of the bag. But homemade chips taste different than the kind you buy at the store, and they’re a real treat. If you’ve never tried them, now’s the time!

Homemade tortilla chips are made with cut up corn tortillas, with a little oil to coat and salt to season. I like squeezing on a little fresh lime juice for extra flavor when they’re done baking.

They aren’t quite as crispy as store-bought chips, but still crispy enough, with a slightly chewy texture that makes them taste more hearty.

Homemade Salsa

Homemade Salsa

This Homemade Salsa recipe comes together in 5 minutes with the simplest, healthy ingredients. This Texas Mexican restaurant style salsa has the perfect consistency that’s not too chunky and not too thin- perfect for dipping chips, serving on tacos, or using in your other favorite Tex-Mex recipes!

Mexican restaurants in Texas do salsa really well. It flows freely (both in quantity and the fact that it costs nothing!) with fresh tortilla chips. It’s always packed with fresh flavor and has the perfect consistency.

So here’s how to make your over own Texas restaurant-style red salsa in only 5 minutes with the help of a food processor!

This recipe uses canned whole tomatoes, rather than fresh. It’s a shortcut that doesn’t skimp on flavor and, in my opinion, is actually better than using fresh tomatoes.

You can enjoy this low calorie, healthy, fat free salsa with tortilla chips, on tacos, in burritos, spooned on top of scrambled eggs… or any other way you use salsa!

Ingredients and substitutions

  • Canned whole, peeled tomatoes – you may substitute diced in a pinch (drain them first as indicated in the recipe) but I think whole are best for the texture of this salsa.

Bruschetta Pasta

Bruschetta Pasta

This Bruschetta Pasta recipe is packed with fresh tomatoes, basil, garlic, and olive oil. It comes together in a mere 15 minutes with 6 ingredients and you don’t have to cook anything except the pasta! Just mix up a simple Bruschetta, and toss with warm pasta for one of the easiest, fastest recipes of your life. And it’s vegetarian (vegan optional)!

Really? 15 minutes? YUP. You’ve got to make this easy pasta recipe as soon as possible, and before summer ends! And as long as you have olive oil, salt, and pepper, you just need 6 more ingredients. It’s so easy!

My favorite part about this recipe is that it doesn’t require any cooking aside from the pasta.

You just mix all the ingredients in a bowl to make a quick bruschetta, let it sit for a few minutes, then toss with the warm pasta when it’s ready. No roasting anything or heating up your kitchen… and a really minimal amount of dishes for easy clean up. It’s the perfect summer pasta recipe!

Tortilla Egg Wraps with Mushrooms and Olives

Tortilla Egg Wraps with Mushrooms and Olives

These Tortilla Egg Wraps are packed with Mediterranean flavor from mushrooms, oregano, black olives, mozzarella cheese, and sun-dried tomato paste. Inspired by Nadiya Hussain’s recipe on “Nadiya’s Time to Eat” on Netflix, this 10-minute recipe is perfect for breakfast, lunch, or dinner!

As you may already know if you follow me on social media or subscribe to my email list, I had an unfortunate accident a few weeks ago involving my kneecap and my concrete garage floor. My kneecap broke in half- I’m on the mend after surgery, and am feeling much better.

As a result, I have spent a LOT of time watching TV. Honestly, discovering new shows to watch is something I haven’t indulged in since before I had kids. And when I discovered a new cooking show on Netflix to watch I was so pumped!

“Nadiya’s Time to Eat” features Great British Bake Off winner Nadiya Hussain, cooking up really fast and easy recipes with time-saving shortcuts. Her smile, humor, and cheerful personality are the icing on the (delicious) cake. Give this show a watch!

These Mushroom and Egg Wraps are inspired by her egg rolls recipe featured on the show.

One Pot Cheesy Taco Pasta

One Pot Cheesy Taco Pasta

This easy Taco Pasta recipe is made in one pot for fast clean-up with melty cheese in every bite, packed with flavor and healthy ingredients like lean ground beef, black beans, corn, and bell peppers. You’re going to want to make this crowd-pleasing 30 minute meal every week!

One pot pasta is such a timesaver and such an easy way to make a flavor-packed pasta dish. It’s one of my favorite weeknight dinner hacks.

The dry pasta cooks right in the pot with all the other ingredients, rather than boiling it separately in water and then adding it in. This does two things:

  1. The pasta absorbs all the delicious flavors from the spices, broth, and veggies.
  2. All the starch from the pasta stays in the pot, creating a thick and luxurious sauce that sticks to every bite.

Plus, fewer dishes!

Ingredients and substitutions

  • Veggies: Onion, red bell pepper, garlic, and frozen corn. I prefer using yellow onion, but a red, white, or sweet will do in a pinch.

Homemade Taco Seasoning

Homemade Taco Seasoning

Making your own Homemade Taco Seasoning takes only 5 minutes and you probably already have the spices needed in your pantry! It’s so much cheaper than buying a pre-made mix, and it’s a great way to add healthy, low-calorie flavor to your favorite Mexican-inspired recipes.

This DIY taco seasoning mix is perfect to add to chicken, beef, or shrimp in tacos or enchiladas. Or, you can add it to any Mexican-inspired pasta, rice, or other dish. It’s a versatile way to add healthy flavor to food!

When you use lots of spices, you can pump up the flavor of food without the need for too much added fat.

And it’s so nice to have a few go-to spice mixes ready to go in your pantry so you can whip up recipes in a jiffy without the need for measuring each and every spice.

This taco seasoning recipe includes salt, which means you won’t need to add much, or any, salt to the recipe you’re making. You can always leave the salt out of the mix if you prefer to control it on a case by case basis.

Greek Salad

Greek Salad

This easy Greek salad takes 15 minutes to make and is dressed in a simple, authentic red wine vinegar dressing and packed with Mediterranean flavor! Cucumbers, tomato, feta cheese, kalamata olives, bell pepper, and red onion are the stars in this yummy side dish that’s super easy to prep ahead of time.

Having a go-to salad recipe for any occasion is a must for any home cook. This Greek Salad recipe is mine, and I’m so excited to finally share it!

What makes a Greek salad “authentic?’

People may argue about what “authentic” means when it comes to Greek salads. Lettuce or no lettuce, bell peppers or no bell peppers, crumbled feta or a big ol’ hunk placed on top, etc.

Here’s how I feel- lettuce, if you use it, should not be the star of the show, and the dressing should be unapologetically vinegary and simple.

I used romaine lettuce here (only about 2 cups), and thinly sliced so it wouldn’t overpower the other delicious ingredients. The salad is loaded with salty feta and briny kalamata olives, as it should be.

Greek Chicken Bites

Greek Chicken Bites

These Greek Chicken Bites seasoned with lemon, garlic, and oregano are little flavor-packed nuggets that you’ll want to use for everything! Add to a salad, wrap in a flatbread for a gyro sandwich, serve as a main course, or eat them on their own dipped in yogurt sauce. They take 20 minutes to make, 5 ingredients, and they’re a versatile low-carb, paleo/whole30 compliant recipe!

I can’t get over how simple and fast this recipe for Greek Chicken Bites is. We had them on the side of a simple Greek salad, which was the perfect summertime meal.

The chicken bites are cooked in a skillet on the stovetop, and because the chicken is cut into small pieces, they only take 10 minutes to cook (and no heating up your kitchen with the oven!).

That, plus 10 minutes prep makes for a super fast, crowd-pleasing recipe. You’ll need at least 20 minutes of marinating time to get the best flavor, but if you’re in a rush you can skip this (or prep the day before to let it sit overnight in the fridge to marinate).

Greek Shrimp with Tomatoes and Feta (Garides Saganaki)

Greek Shrimp with Tomatoes and Feta (Garides Saganaki)

Garides Saganaki, or Greek Shrimp with Tomatoes and Feta Cheese, is a one-skillet, easy recipe that’s packed with bright, fresh flavors. And it takes only 25 minutes! It’s low-carb on its own but I love serving it with crusty bread to mop up all the sauce.

You’re going to LOVE this easy Mediterranean shrimp recipe. The flavors from onion and garlic, fresh lemon juice and oregano, and salty feta cheese with savory tomatoes is out of this world.

This Greek shrimp dish is similar to a stew, so it’s great to serve with some crusty bread or pita, rice, grits/polenta, or pasta to make sure you can mop up the sauce.

There are many versions of garides saganaki out there, and I sought out to make the easiest possible version with the most readily available ingredients.

Some recipes use ouzo; this uses white wine instead (which can be omitted).

Some call for cooking the shrimp separately; this recipe poaches them directly in the tomato sauce for simplicity and more infused flavor.

Jalapeño Cornbread

Jalapeño Cornbread

This recipe for Jalapeño Cornbread is made with pickled jalapeños and the brine, so the flavor infused into every bite! It’s moist and packed with sweet and spicy flavor, and the perfect side for chili or BBQ. I love serving it with a drizzle of honey!

There’s not much better than homemade sweet cornbread paired with chili. It may be a million degrees here in Texas, and it’s not even close to fall, but the other night I made pumpkin chili with this cornbread and I have no regrets about it!

Whether you need a side for chili, or your favorite BBQ food, or you need an easy dish to take to a potluck, this Jalapeño Cornbread is sure to be a winner.

And it’s really easy to make it mild or spicy, depending on your preferences! I used mild jalapeños, which meant my kids gobbled it up.

Ingredients and Susbstitutions

  • Pickled Jalapeños and the brine– I used homemade quick pickled jalapeños, but normally I would use store-bought. You can usually find store-bought in both mild and spicy forms.

BLT Pasta Salad

BLT Pasta Salad

This BLT Pasta Salad recipe is perfect as a side dish or main course, and is smothered in a creamy and tangy mayo-based garlic and herb dressing. It’s easy to make ahead of time for potlucks, picnics, or BBQs, and it only takes 25 minutes to make!

This pasta salad recipe has all the flavors you love about BLT sandwiches- thick-cut bacon, crisp romaine lettuce, and sweet tomatoes- smothered in a creamy mayo-based dressing. You’re going to love how easily this comes together and how delicious it tastes!

You only need one bowl and 25 minutes for this easy recipe. While the bacon is cooking, it’s easy to save time and prep the remaining ingredients and mix the dressing.

Serve this easy BLT pasta salad recipe at your next BBQ or party- it would be perfect for the Fourth of July!

Ingredients and Substitutions

  • Macaroni- another small-medium pasta shape may be used, such as farfalle (bowties), penne, rotini, shells, etc. You can also use gluten-free, whole wheat, or grain-free (such as chickpea) pasta.
  • Bacon- I love thick-cut hickory smoked bacon, but you can use any kind, including turkey bacon or a vegetarian/vegan bacon substitute.

Quick Pickled Jalapeños

Quick Pickled Jalapeños

Making Homemade Quick Pickled Jalapeños is so fast, easy, and delicious, you’ll never want to buy store-bought again! These are sweet and spicy, flavor-packed from garlic and oregano, and you only need 10 minutes of hands-on time.

Whether you have a bunch of jalapeños growing in your (or your neighbor’s) garden, or you find a bulk package at Trader Joe’s, one of the best things you can do with them is pickle them.

This recipe doesn’t require any canning or preserving– it’s an easy way to pickle jalapeño peppers quickly, and they’ll last for months in your fridge!

You can use them on tacos, on sandwiches or burgers, on nachos, or in any number of recipes. But honestly, they’re so delicious, you may just want to eat them straight from the jar!

In this post I’ll explain how to make quick pickled jalapeños, tips for making them less spicy, and give recipe suggestions for how to use them.

Ingredients and Substitutions

  • Jalapeño peppers – you can use this pickling method for other pepper varieties, like Serranos or other chiles.

Sweet and Sour Chicken

Sweet and Sour Chicken

This Sweet and Sour Chicken is an easy, 25-minute Chinese stir fry recipe with pineapple, bell pepper, and the most delicious sweet and tangy sauce! It’s gluten-free and so much better and cheaper than take-out – serve it with cooked rice, noodles, or on lettuce wraps.

Making your favorite Chinese take-out food from home is so much easier than you’d think! And this easy sweet and sour chicken with pineapple recipe is no exception.

The chicken is seasoned with soy sauce and spices, then coated in cornstarch and pan-fried until crispy. Then, it’s mixed with sautéed peppers, onions, and pineapple, along with the most delicious sweet and sour sauce made with ingredients you probably already have in your pantry.

You can serve it over rice or noodles, eat it plain, or eat it on cool, refreshing lettuce wraps.

Easy Shakshuka with Feta

Easy Shakshuka with Feta

Shakshuka with feta is an easy one-pan vegetarian Mediterranean egg recipe you’re going to want to add to your recipe folder for breakfast, lunch, or dinner! Eggs are simmered in a tomato-based sauce with peppers, onions, and warm spices. Then, it’s topped with melty feta cheese.

Shakshuka is a common Tunisian breakfast recipe, but versions of it can be found all over the Mediterranean- across North Africa, all the way to Italy (where it’s more commonly called eggs in purgatory). Common other spellings include Chakchouka and Shakshouka.

First, there’s a simple tomato sauce, boosted with sautéed onions and peppers and savory spices (cumin, garlic, smoked paprika, crushed red pepper, and cilantro). Then, eggs are cracked directly into the sauce and simmered until cooked to your liking. Crumbled feta cheese is sprinkled on top of the shakshuka and melts into every warm bite.

It’s perfect served with crusty bread or pita. And while traditionally a breakfast food, I love it any time of day!

Best of all, you only need 25 minutes and one pan to make it!

Here are some of my all-time favorite food bloggers the internet has to offer- those from whom I draw inspiration for my own cooking, photography, and food blogging practice. In this list you’ll find Black bloggers that share vegan/plant-based recipes, African cuisine, air fryer, Instant Pot, and slow cooker recipes, Caribbean and Jamaican cuisine, Southern soul food, Cajun and Creole cuisine, and more all-around delicious healthy, wholesome recipes.

Food blogging is an industry, just like other industries. And Black bloggers face barriers in it, just like with other businesses. In reflecting on my business practices this week I realized I had a striking lack of inclusivity in the way I run my blog.

This week, I’m pausing all food content and creation. Instead, I’m focusing on an actionable plan for inclusivity and anti-racism as a permanent pillar of how I run my business, alongside continued activism in my personal life.

I invite you to reflect on your own internet browsing to uplift Black bloggers and their businesses. Sustained, small acts like this can help change larger, systemic issues faced by the Black community for truly meaningful change.

Instant Pot Barley

Instant Pot Barley

Cooking barley (pearl or hulled) in an instant pot or pressure cooker is the fastest, easiest way to cook this heart-healthy grain to fluffy perfection in only 20 minutes! Use cooked barley as you would rice or oatmeal- in salads, for breakfast, and all kinds of recipes.

Barley is a nutty, earthy grain with a wonderful flavor and chewy texture that’s really inexpensive. It’s packed full of soluble fiber and nutrients, making it a heart healthy grain. It’s kind of an in-between of oats and rice – more versatile and less slimy/mushy than oats, and more hearty and nutritious than rice.

I love using barley to make all kinds of things, but one drawback is that it takes a long time to cook. Enter: the Instant Pot!

Barley can take up to an hour to cook on the stovetop. But if you use a pressure cooker, it will only take 20-25 minutes of completely hands-off time (plus the time it takes to come to pressure). No stirring, just the instant pot working its magic while you live your life.

You can make a batch of barley and store it in your fridge for a few days, using it throughout the week in recipes that are very quick if you already have the barley cooked.
