Greek Salad

Greek Salad

This easy Greek salad takes 15 minutes to make and is dressed in a simple, authentic red wine vinegar dressing and packed with Mediterranean flavor! Cucumbers, tomato, feta cheese, kalamata olives, bell pepper, and red onion are the stars in this yummy side dish that’s super easy to prep ahead of time.

Having a go-to salad recipe for any occasion is a must for any home cook. This Greek Salad recipe is mine, and I’m so excited to finally share it!

What makes a Greek salad “authentic?’

People may argue about what “authentic” means when it comes to Greek salads. Lettuce or no lettuce, bell peppers or no bell peppers, crumbled feta or a big ol’ hunk placed on top, etc.

Here’s how I feel- lettuce, if you use it, should not be the star of the show, and the dressing should be unapologetically vinegary and simple.

I used romaine lettuce here (only about 2 cups), and thinly sliced so it wouldn’t overpower the other delicious ingredients. The salad is loaded with salty feta and briny kalamata olives, as it should be.

Greek Chicken Bites

Greek Chicken Bites

These Greek Chicken Bites seasoned with lemon, garlic, and oregano are little flavor-packed nuggets that you’ll want to use for everything! Add to a salad, wrap in a flatbread for a gyro sandwich, serve as a main course, or eat them on their own dipped in yogurt sauce. They take 20 minutes to make, 5 ingredients, and they’re a versatile low-carb, paleo/whole30 compliant recipe!

I can’t get over how simple and fast this recipe for Greek Chicken Bites is. We had them on the side of a simple Greek salad, which was the perfect summertime meal.

The chicken bites are cooked in a skillet on the stovetop, and because the chicken is cut into small pieces, they only take 10 minutes to cook (and no heating up your kitchen with the oven!).

That, plus 10 minutes prep makes for a super fast, crowd-pleasing recipe. You’ll need at least 20 minutes of marinating time to get the best flavor, but if you’re in a rush you can skip this (or prep the day before to let it sit overnight in the fridge to marinate).

Greek Shrimp with Tomatoes and Feta (Garides Saganaki)

Greek Shrimp with Tomatoes and Feta (Garides Saganaki)

Garides Saganaki, or Greek Shrimp with Tomatoes and Feta Cheese, is a one-skillet, easy recipe that’s packed with bright, fresh flavors. And it takes only 25 minutes! It’s low-carb on its own but I love serving it with crusty bread to mop up all the sauce.

You’re going to LOVE this easy Mediterranean shrimp recipe. The flavors from onion and garlic, fresh lemon juice and oregano, and salty feta cheese with savory tomatoes is out of this world.

This Greek shrimp dish is similar to a stew, so it’s great to serve with some crusty bread or pita, rice, grits/polenta, or pasta to make sure you can mop up the sauce.

There are many versions of garides saganaki out there, and I sought out to make the easiest possible version with the most readily available ingredients.

Some recipes use ouzo; this uses white wine instead (which can be omitted).

Some call for cooking the shrimp separately; this recipe poaches them directly in the tomato sauce for simplicity and more infused flavor.

Jalapeño Cornbread

Jalapeño Cornbread

This recipe for Jalapeño Cornbread is made with pickled jalapeños and the brine, so the flavor infused into every bite! It’s moist and packed with sweet and spicy flavor, and the perfect side for chili or BBQ. I love serving it with a drizzle of honey!

There’s not much better than homemade sweet cornbread paired with chili. It may be a million degrees here in Texas, and it’s not even close to fall, but the other night I made pumpkin chili with this cornbread and I have no regrets about it!

Whether you need a side for chili, or your favorite BBQ food, or you need an easy dish to take to a potluck, this Jalapeño Cornbread is sure to be a winner.

And it’s really easy to make it mild or spicy, depending on your preferences! I used mild jalapeños, which meant my kids gobbled it up.

Ingredients and Susbstitutions

  • Pickled Jalapeños and the brine– I used homemade quick pickled jalapeños, but normally I would use store-bought. You can usually find store-bought in both mild and spicy forms.

BLT Pasta Salad

BLT Pasta Salad

This BLT Pasta Salad recipe is perfect as a side dish or main course, and is smothered in a creamy and tangy mayo-based garlic and herb dressing. It’s easy to make ahead of time for potlucks, picnics, or BBQs, and it only takes 25 minutes to make!

This pasta salad recipe has all the flavors you love about BLT sandwiches- thick-cut bacon, crisp romaine lettuce, and sweet tomatoes- smothered in a creamy mayo-based dressing. You’re going to love how easily this comes together and how delicious it tastes!

You only need one bowl and 25 minutes for this easy recipe. While the bacon is cooking, it’s easy to save time and prep the remaining ingredients and mix the dressing.

Serve this easy BLT pasta salad recipe at your next BBQ or party- it would be perfect for the Fourth of July!

Ingredients and Substitutions

  • Macaroni- another small-medium pasta shape may be used, such as farfalle (bowties), penne, rotini, shells, etc. You can also use gluten-free, whole wheat, or grain-free (such as chickpea) pasta.
  • Bacon- I love thick-cut hickory smoked bacon, but you can use any kind, including turkey bacon or a vegetarian/vegan bacon substitute.

Quick Pickled Jalapeños

Quick Pickled Jalapeños

Making Homemade Quick Pickled Jalapeños is so fast, easy, and delicious, you’ll never want to buy store-bought again! These are sweet and spicy, flavor-packed from garlic and oregano, and you only need 10 minutes of hands-on time.

Whether you have a bunch of jalapeños growing in your (or your neighbor’s) garden, or you find a bulk package at Trader Joe’s, one of the best things you can do with them is pickle them.

This recipe doesn’t require any canning or preserving– it’s an easy way to pickle jalapeño peppers quickly, and they’ll last for months in your fridge!

You can use them on tacos, on sandwiches or burgers, on nachos, or in any number of recipes. But honestly, they’re so delicious, you may just want to eat them straight from the jar!

In this post I’ll explain how to make quick pickled jalapeños, tips for making them less spicy, and give recipe suggestions for how to use them.

Ingredients and Substitutions

  • Jalapeño peppers – you can use this pickling method for other pepper varieties, like Serranos or other chiles.

Sweet and Sour Chicken

Sweet and Sour Chicken

This Sweet and Sour Chicken is an easy, 25-minute Chinese stir fry recipe with pineapple, bell pepper, and the most delicious sweet and tangy sauce! It’s gluten-free and so much better and cheaper than take-out – serve it with cooked rice, noodles, or on lettuce wraps.

Making your favorite Chinese take-out food from home is so much easier than you’d think! And this easy sweet and sour chicken with pineapple recipe is no exception.

The chicken is seasoned with soy sauce and spices, then coated in cornstarch and pan-fried until crispy. Then, it’s mixed with sautéed peppers, onions, and pineapple, along with the most delicious sweet and sour sauce made with ingredients you probably already have in your pantry.

You can serve it over rice or noodles, eat it plain, or eat it on cool, refreshing lettuce wraps.

This recipe is inspired by Jessica in the Kitchen’s Vegan Sweet and Sour Tofu. Check out her blog for more vegetarian and vegan recipe inspiration!

Ingredients and Substitutions

  • Chicken Breasts – you can use thighs if you prefer, or a mixture.

Easy Shakshuka with Feta

Easy Shakshuka with Feta

Shakshuka with feta is an easy one-pan vegetarian Mediterranean egg recipe you’re going to want to add to your recipe folder for breakfast, lunch, or dinner! Eggs are simmered in a tomato-based sauce with peppers, onions, and warm spices. Then, it’s topped with melty feta cheese.

Shakshuka is a common Tunisian breakfast recipe, but versions of it can be found all over the Mediterranean- across North Africa, all the way to Italy (where it’s more commonly called eggs in purgatory). Common other spellings include Chakchouka and Shakshouka.

First, there’s a simple tomato sauce, boosted with sautéed onions and peppers and savory spices (cumin, garlic, smoked paprika, crushed red pepper, and cilantro). Then, eggs are cracked directly into the sauce and simmered until cooked to your liking. Crumbled feta cheese is sprinkled on top of the shakshuka and melts into every warm bite.

It’s perfect served with crusty bread or pita. And while traditionally a breakfast food, I love it any time of day!

Best of all, you only need 25 minutes and one pan to make it!

The Best Black Food Bloggers to Follow

Here are some of my all-time favorite food bloggers the internet has to offer- those from whom I draw inspiration for my own cooking, photography, and food blogging practice. In this list you’ll find Black bloggers that share vegan/plant-based recipes, African cuisine, air fryer, Instant Pot, and slow cooker recipes, Caribbean and Jamaican cuisine, Southern soul food, Cajun and Creole cuisine, and more all-around delicious healthy, wholesome recipes.

Food blogging is an industry, just like other industries. And Black bloggers face barriers in it, just like with other businesses. In reflecting on my business practices this week I realized I had a striking lack of inclusivity in the way I run my blog.

This week, I’m pausing all food content and creation. Instead, I’m focusing on an actionable plan for inclusivity and anti-racism as a permanent pillar of how I run my business, alongside continued activism in my personal life.

I invite you to reflect on your own internet browsing to uplift Black bloggers and their businesses. Sustained, small acts like this can help change larger, systemic issues faced by the Black community for truly meaningful change.

Instant Pot Barley

Instant Pot Barley

Cooking barley (pearl or hulled) in an instant pot or pressure cooker is the fastest, easiest way to cook this heart-healthy grain to fluffy perfection in only 20 minutes! Use cooked barley as you would rice or oatmeal- in salads, for breakfast, and all kinds of recipes.

Barley is a nutty, earthy grain with a wonderful flavor and chewy texture that’s really inexpensive. It’s packed full of soluble fiber and nutrients, making it a heart healthy grain. It’s kind of an in-between of oats and rice – more versatile and less slimy/mushy than oats, and more hearty and nutritious than rice.

I love using barley to make all kinds of things, but one drawback is that it takes a long time to cook. Enter: the Instant Pot!

Barley can take up to an hour to cook on the stovetop. But if you use a pressure cooker, it will only take 20-25 minutes of completely hands-off time (plus the time it takes to come to pressure). No stirring, just the instant pot working its magic while you live your life.

You can make a batch of barley and store it in your fridge for a few days, using it throughout the week in recipes that are very quick if you already have the barley cooked.

Healthy Buffalo Chicken Tacos

Healthy Buffalo Chicken Tacos

These Healthy Buffalo Chicken Tacos are an easy recipe to make in only 20 minutes! Chicken breasts are thinly sliced and cooked, smothered in buffalo sauce, and served on toasted corn tortillas with crunchy celery and bell pepper salsa and cool, creamy ranch (or blue cheese) dressing.

I find myself craving buffalo chicken constantly, but take-out buffalo wings come at a high price (especially in terms of calories!).

So I LOVE making alternative buffalo recipes that are much healthier than traditional wings. All the flavor and none of the guilt.

These tacos (which happen to also be gluten-free) come in at only 195 calories per taco!

They’re made light and healthy with sautéed chicken breast meat (with no breading), and a secret flavor-boosting ingredient added to the sauce to keep it thick, mellow, and luxurious without tons of butter. OK I’ll just tell you- it’s ketchup!

And the healthy celery and bell pepper salsa adds cool crunchiness and veggies to the tacos, with lots of bright flavor to balance out the buffalo sauce.

Mexican Pulled Chicken

Mexican Pulled Chicken

This Mexican Pulled (or shredded) Chicken is an easy, healthy recipe to add to burritos, tacos, enchiladas, or served as a main course. Chicken thighs are marinated in a smoky, flavorful spice mixture and seared, creating the most delicious crispy, crunchy browned bits, then shredded with two forks.

This is the only chicken recipe you will ever need for all your Mexican-inspired recipe needs. It’s absolutely delicious eaten on its own, in enchiladas or tacos, on salads, in even soup.

I like sautéing veggies in the skillet after the chicken cooks and serving everything on top of rice with chopped tomato and avocado for a healthy burrito bowl.

And it’s the perfect thing to cook in bulk to enjoy in different ways throughout the week!

I set out to recreate Chipotle’s grilled chicken to make homemade burrito bowls and, after doing some research on copycat recipes, found myself without a vital ingredient: chipotle peppers in adobo. To get a similarly smoky taste, I used smoked paprika in the marinade instead, along with ground coriander, cumin, and garlic powder.

Homemade Honey Mustard Sauce/Dressing

Homemade Honey Mustard Sauce/Dressing

Ever wonder how to make a homemade honey mustard sauce? It’s so easy with only four ingredients and 5 minutes! This honey mustard can be used as a dipping sauce, salad dressing, sandwich spread, or even a marinade.

You probably already have everything you need to make this easy recipe. A little mayonnaise, mustard, honey, and vinegar and you’ve got yourself a homemade, better than chick-fil-a honey mustard sauce!

I love that this version doesn’t have any preservatives or additives, like many store-bought or fast food honey mustards.

This honey mustard is perfect as a dip for homemade chicken nuggets or oven-baked chicken tenders, but it’s also a great sandwich spread, salad dressing, or marinade for grilled chicken or pork.

It stays good in the fridge for weeks, and you can use any kind of mustard you want!

How to make homemade honey mustard sauce

Just whisk some mayonnaise, mustard, honey, and apple cider vinegar together in a small bowl. That’s it!

You could also mix it right up in a jar, to save on dishes, and store the covered jar right in your fridge.

Juicy Oven-Baked Pork Chops with Garlic, Lemon, and Herbs

Juicy Oven-Baked Pork Chops with Garlic, Lemon, and Herbs

These Oven-Baked Pork Chops come out perfectly juicy every time, with delicious flavor from garlic, lemon, and herbs. You only need 30 minutes and 5 ingredients for this low-carb recipe. The pork chops are pan-seared briefly and finished in the oven. And the luscious white wine and butter pan sauce, while optional, is so easy to make!

I don’t know how I don’t have a pork chops recipe on the blog already, but better late than never! I love how fast and easy pork chops are to make. They’re a lean, healthy protein, they’re inexpensive, and such a crowd pleaser!

These oven-baked pork chops are quick and easy enough to make for a casual weeknight dinner but delicious enough to serve for a dinner party or special occasion, especially with the pan sauce drizzled on top.

Pan-searing the chops before baking creates texture and flavor for a perfectly cooked, tender, juicy pork chop every time. And the flavor of the fresh lemon, garlic, oregano, and thyme are the perfect complements to the pork, which is somewhat bland on its own.

Quick Pickled Red Onions

Quick Pickled Red Onions

This recipe for Quick Pickled Red Onions is easy to make and perfect for tacos, sandwiches, pasta salads, sandwiches, and more! They’re cheap, and the perfect balance of sweet and tangy, with all the “bite” from raw red onions completely removed. And you only need a few ingredients and 5 minutes of prep!

I love how fast and easy these pickled red onions are to make- just add some ingredients to a jar, shake, and refrigerate. That’s it!

They’ll last for weeks in the fridge, if you somehow experience the miracle of not eating them all within a few hours. They’re addicting, added to any number of recipes, and frankly eaten plain out of the jar.

I wouldn’t THINK of popping a piece of raw red onion into my mouth for a snack, but it’s different when they’re pickled! Quick pickling the red onions takes all the bite out of them, creating a delicious sweet and tangy flavor with a soft outside and crunchy inside.

These pickled red onions first appeared on a Bowl of Delicious recipe for crispy brussels sprouts with pickled red onions.

Green Goddess Pasta Salad

Green Goddess Pasta Salad

This Green Goddess Pasta Salad with avocado, broccoli, spinach, and pumpkin seeds is an easy vegan make-ahead side or light main course literally bursting at the seams with healthy ingredients. This 30-minute plant-based recipe is tossed in a simple lemon garlic olive oil dressing, and packed with green veggies!

This is one of my favorite vegetarian pasta recipes. It’s actually vegan, since the parmesan cheese is completely optional. It’s served cold, which makes it perfect to make ahead for meal prep, leftovers, or to take on a picnic, and I love how it’s packed with so many healthy green veggies (and is thusly named “Green Goddess Pasta Salad”).

The textures of the whole wheat pasta, creamy avocado, and crunchy pumpkin seeds work so well together. The healthy fats from the olive-oil based dressing and avocado help balance out the bitterness of the broccoli and spinach. I could eat this every week!

I adapted this from a tortellini salad in one of my favorite cookbooks,Super Natural Every Day by Heidi Swanson (the blogger from 101 Cookbooks). Her blog, and the book, are full of unique, nutrient-packed vegetarian recipes that are easy and delicious.

Buffalo Cauliflower “Wings”

Buffalo Cauliflower “Wings”

These Buffalo Cauliflower Wings are the perfect way to enjoy a healthier, vegetarian version of chicken wings. They have up to 66% FEWER calories than regular chicken wings! These oven-baked buffalo cauliflower bites will satisfy that wings craving completely without the guilt, with a crispy panko breadcrumb coating and classic buffalo sauce smothering every bite. YOU GUYS. These buffalo cauliflower bites are heaven. If you love buffalo flavor, you really have to try these.

I should clarify: I really don’t like cauliflower pretending to be something it’s not. Cauliflower rice? Meh. Cauliflower pizza crust? I’ll stick to the real thing.

But these are an exception to the rule. The texture and flavor of the cauliflower is so perfect, coated in a batter, dipped in crispy buttery panko crumbs, and baked and tossed with classic buffalo sauce.

Five-Minute Pea Purée (Pea Hummus)

Five-Minute Pea Purée (Pea Hummus)

This recipe for pea purée, or pea hummus, is such an easy way to transform a bag of frozen peas! It’s packed with fresh flavor from mint, parsley, and lemon, with a healthy dose of extra-virgin olive oil. Use it as a dip or spread with fresh bread, pita, or crackers. Or, serve it underneath seared scallops or grilled chicken for a “fancy” dinner idea.

Do you have a bag of peas hanging out in your freezer that you haven’t used yet? This is the perfect way to use them up. Frozen pea hummus, or pea purée, is healthy, delicious, and takes mere minutes to whip up in your food processor!

It’s made similarly to chickpea hummus but is much different in taste and texture. It’s sweet from the peas, with aromatic spring flavor from fresh mint and parsley. And it has a more rustic texture than chickpea hummus, which is usually quite smooth and creamy.

We had this for lunch paired with freshly baked homemade bread. It would be great served as a vegan/vegetarian appetizer with pita bread or chips, crackers, or crostini.

Italian Mac and Cheese

Italian Mac and Cheese

This Italian Mac and Cheese recipe is topped with golden crispy breadcrumbs, seasoned with garlic and herbs, and smothered in a decadent mozzarella and parmesan cheese sauce! Since it’s broiled only for a few minutes, it’s not dry like other baked macaroni and cheese recipes. It’s perfect as a vegetarian side dish or main course.

I’ve been wondering what to do with the GIANT bag of shredded mozzarella cheese sitting in my fridge. Sometimes the best recipes come from using stuff up with what I have. In fact, raiding your fridge or pantry is a great way to reduce food waste.

And this Italian mac and cheese is no exception. No cheese will ever be wasted in my house!

The cheese sauce is creamy and decadent, made with butter, milk, mozzarella cheese, parmesan cheese, and some fresh parsley. The breadcrumb topping – oh boy. A mixture of breadcrumbs, butter, more parmesan and parsley, and garlic powder. And when the two meet, it’s heaven.

The time-saving trick for this recipe is that it’s broiled for only a few minutes after sprinkling the breadcrumbs on top, as opposed to baked.

Mediterranean Chickpea Salad

Mediterranean Chickpea Salad

This easy Chickpea Salad recipe takes only 10 minutes to make and is bursting with yummy and healthy Mediterranean ingredients, like feta cheese, sliced cucumbers, and sun dried tomatoes. Everything is tossed in a delicious fresh herb vinaigrette for a simple make-ahead vegetarian light main course or side dish, and it’s perfect for meal prep.

Chickpeas (also known as garbanzo beans) are one of my favorite legumes. With a firm texture, they’re perfect for this make-ahead salad that can easily withstand a few days in the fridge. With a nutty flavor, they’re a bit more interesting than white beans or other legumes.

Chickpeas are cheap, and they’re super healthy, too!

This recipe is a great way to use up that random can or two of chickpeas you have in your pantry. And it’s very versatile- you can use dried herbs instead of fresh, omit any of the fresh ingredients, and really make it your own.

If you’re looking for fresh, healthy Mediterranean flavor, give this easy chickpea salad with feta recipe a try!
