This easy Greek salad takes 15 minutes to make and is dressed in a simple, authentic red wine vinegar dressing and packed with Mediterranean flavor! Having a go-to salad recipe for any occasion is a must for any home cook. This Greek Salad recipe is mine, and I’m so excited to finally share it!

What makes a Greek salad “authentic?’

People may argue about what “authentic” means when it comes to Greek salads. Lettuce or no lettuce, bell peppers or no bell peppers, crumbled feta or a big ol’ hunk placed on top, etc.

Here’s how I feel- lettuce, if you use it, should not be the star of the show, and the dressing should be unapologetically vinegary and simple.

I used romaine lettuce here (only about 2 cups), and thinly sliced so it wouldn’t overpower the other delicious ingredients. The salad is loaded with salty feta and briny kalamata olives, as it should be.

These Greek Chicken Bites seasoned with lemon, garlic, and oregano are little flavor-packed nuggets that you’ll want to use for everything! Add to a salad, wrap in a flatbread for a gyro sandwich, serve as a main course, or eat them on their own dipped in yogurt sauce. They take 20 minutes to make, 5 ingredients, and they’re a versatile low-carb, paleo/whole30 compliant recipe!

I can’t get over how simple and fast this recipe for Greek Chicken Bites is. We had them on the side of a simple Greek salad, which was the perfect summertime meal.

The chicken bites are cooked in a skillet on the stovetop, and because the chicken is cut into small pieces, they only take 10 minutes to cook (and no heating up your kitchen with the oven!).

That, plus 10 minutes prep makes for a super fast, crowd-pleasing recipe. You’ll need at least 20 minutes of marinating time to get the best flavor, but if you’re in a rush you can skip this (or prep the day before to let it sit overnight in the fridge to marinate).

Greek Shrimp with Tomatoes and Feta (Garides Saganaki)

Garides Saganaki, or Greek Shrimp with Tomatoes and Feta Cheese, is a one-skillet, easy recipe that’s packed with bright, fresh flavors. And it takes only 25 minutes! It’s low-carb on its own but I love serving it with crusty bread to mop up all the sauce.

You’re going to LOVE this easy Mediterranean shrimp recipe. The flavors from onion and garlic, fresh lemon juice and oregano, and salty feta cheese with savory tomatoes is out of this world.

This Greek shrimp dish is similar to a stew, so it’s great to serve with some crusty bread or pita, rice, grits/polenta, or pasta to make sure you can mop up the sauce.

There are many versions of garides saganaki out there, and I sought out to make the easiest possible version with the most readily available ingredients.

Some recipes use ouzo; this uses white wine instead (which can be omitted).

Some call for cooking the shrimp separately; this recipe poaches them directly in the tomato sauce for simplicity and more infused flavor.

Easy Shakshuka with Feta

Shakshuka with feta is an easy one-pan vegetarian Mediterranean egg recipe you’re going to want to add to your recipe folder for breakfast, lunch, or dinner! Eggs are simmered in a tomato-based sauce with peppers, onions, and warm spices. Then, it’s topped with melty feta cheese.

Shakshuka is a common Tunisian breakfast recipe, but versions of it can be found all over the Mediterranean- across North Africa, all the way to Italy (where it’s more commonly called eggs in purgatory). Common other spellings include Chakchouka and Shakshouka.

First, there’s a simple tomato sauce, boosted with sautéed onions and peppers and savory spices (cumin, garlic, smoked paprika, crushed red pepper, and cilantro). Then, eggs are cracked directly into the sauce and simmered until cooked to your liking. Crumbled feta cheese is sprinkled on top of the shakshuka and melts into every warm bite.

It’s perfect served with crusty bread or pita. And while traditionally a breakfast food, I love it any time of day!

Cooking barley (pearl or hulled) in an instant pot or pressure cooker is the fastest, easiest way to cook this heart-healthy grain to fluffy perfection in only 20 minutes! Use cooked barley as you would rice or oatmeal- in salads, for breakfast, and all kinds of recipes. 

Barley is a nutty, earthy grain with a wonderful flavor and chewy texture that’s really inexpensive. It’s packed full of soluble fiber and nutrients, making it a heart healthy grain. It’s kind of an in-between of oats and rice – more versatile and less slimy/mushy than oats, and more hearty and nutritious than rice.

I love using barley to make all kinds of things, but one drawback is that it takes a long time to cook. Enter: the Instant Pot!

Barley can take up to an hour to cook on the stovetop. But if you use a pressure cooker, it will only take 20-25 minutes of completely hands-off time (plus the time it takes to come to pressure). No stirring, just the instant pot working its magic while you live your life.

You can make a batch of barley and store it in your fridge for a few days, using it throughout the week in recipes that are very quick if you already have the barley cooked.

Healthy Buffalo Chicken Tacos

These Healthy Buffalo Chicken Tacos are an easy recipe to make in only 20 minutes! Chicken breasts are thinly sliced and cooked, smothered in buffalo sauce, and served on toasted corn tortillas with crunchy celery and bell pepper salsa and cool, creamy ranch (or blue cheese) dressing.

I find myself craving buffalo chicken constantly, but take-out buffalo wings come at a high price (especially in terms of calories!).

So I LOVE making alternative buffalo recipes that are much healthier than traditional wings. All the flavor and none of the guilt.

These tacos (which happen to also be gluten-free) come in at only 195 calories per taco!

They’re made light and healthy with sautéed chicken breast meat (with no breading), and a secret flavor-boosting ingredient added to the sauce to keep it thick, mellow, and luxurious without tons of butter. OK I’ll just tell you- it’s ketchup!

And the healthy celery and bell pepper salsa adds cool crunchiness and veggies to the tacos, with lots of bright flavor to balance out the buffalo sauce.

This Mexican Pulled (or shredded) Chicken is an easy, healthy recipe to add to burritos, tacos, enchiladas, or served as a main course. Chicken thighs are marinated in a smoky, flavorful spice mixture and seared, creating the most delicious crispy, crunchy browned bits, then shredded with two forks.

This is the only chicken recipe you will ever need for all your Mexican-inspired recipe needs. It’s absolutely delicious eaten on its own, in enchiladas or tacos, on salads, in even soup.

I like sautéing veggies in the skillet after the chicken cooks and serving everything on top of rice with chopped tomato and avocado for a healthy burrito bowl.

And it’s the perfect thing to cook in bulk to enjoy in different ways throughout the week!

I set out to recreate Chipotle’s grilled chicken to make homemade burrito bowls and, after doing some research on copycat recipes, found myself without a vital ingredient: chipotle peppers in adobo. To get a similarly smoky taste, I used smoked paprika in the marinade instead, along with ground coriander, cumin, and garlic powder.

This recipe for Quick Pickled Red Onions is easy to make and perfect for tacos, sandwiches, pasta salads, sandwiches, and more! They’re cheap, and the perfect balance of sweet and tangy, with all the “bite” from raw red onions completely removed. And you only need a few ingredients and 5 minutes of prep!

I love how fast and easy these pickled red onions are to make- just add some ingredients to a jar, shake, and refrigerate. That’s it!

They’ll last for weeks in the fridge, if you somehow experience the miracle of not eating them all within a few hours. They’re addicting, added to any number of recipes, and frankly eaten plain out of the jar.

I wouldn’t THINK of popping a piece of raw red onion into my mouth for a snack, but it’s different when they’re pickled! Quick pickling the red onions takes all the bite out of them, creating a delicious sweet and tangy flavor with a soft outside and crunchy inside.

Green Goddess Pasta Salad

This Green Goddess Pasta Salad with avocado, broccoli, spinach, and pumpkin seeds is an easy vegan make-ahead side or light main course literally bursting at the seams with healthy ingredients. This 30-minute plant-based recipe is tossed in a simple lemon garlic olive oil dressing, and packed with green veggies!

This is one of my favorite vegetarian pasta recipes. It’s actually vegan, since the parmesan cheese is completely optional. It’s served cold, which makes it perfect to make ahead for meal prep, leftovers, or to take on a picnic, and I love how it’s packed with so many healthy green veggies (and is thusly named “Green Goddess Pasta Salad”).

The textures of the whole wheat pasta, creamy avocado, and crunchy pumpkin seeds work so well together. The healthy fats from the olive-oil based dressing and avocado help balance out the bitterness of the broccoli and spinach. I could eat this every week!

Five-Minute Pea Purée (Pea Hummus)

This recipe for pea purée, or pea hummus, is such an easy way to transform a bag of frozen peas! It’s packed with fresh flavor from mint, parsley, and lemon, with a healthy dose of extra-virgin olive oil. Use it as a dip or spread with fresh bread, pita, or crackers. Or, serve it underneath seared scallops or grilled chicken for a “fancy” dinner idea.

Do you have a bag of peas hanging out in your freezer that you haven’t used yet? This is the perfect way to use them up. Frozen pea hummus, or pea purée, is healthy, delicious, and takes mere minutes to whip up in your food processor!

It’s made similarly to chickpea hummus but is much different in taste and texture. It’s sweet from the peas, with aromatic spring flavor from fresh mint and parsley. And it has a more rustic texture than chickpea hummus, which is usually quite smooth and creamy.

We had this for lunch paired with freshly baked homemade bread. It would be great served as a vegan/vegetarian appetizer with pita bread or chips, crackers, or crostini.

This Italian Mac and Cheese recipe is topped with golden crispy breadcrumbs, seasoned with garlic and herbs, and smothered in a decadent mozzarella and parmesan cheese sauce! I’ve been wondering what to do with the GIANT bag of shredded mozzarella cheese sitting in my fridge. Sometimes the best recipes come from using stuff up with what I have. In fact, raiding your fridge or pantry is a great way to reduce food waste.

And this Italian mac and cheese is no exception. No cheese will ever be wasted in my house!

The cheese sauce is creamy and decadent, made with butter, milk, mozzarella cheese, parmesan cheese, and some fresh parsley. The breadcrumb topping – oh boy. A mixture of breadcrumbs, butter, more parmesan and parsley, and garlic powder. And when the two meet, it’s heaven.

The time-saving trick for this recipe is that it’s broiled for only a few minutes after sprinkling the breadcrumbs on top, as opposed to baked.

This recipe for Healthy Blueberry Muffins comes out SUPER moist, made with olive oil, Greek yogurt, and whole wheat flour, and with very little sugar. You can use frozen or fresh blueberries, and they freeze well for mornings on-the-go! They’re perfect for busy families with kids, or if you want to stock your freezer with a healthy breakfast option.

If you’re looking for a toddler or kid-friendly snack, or looking to stock your freezer with a healthy breakfast option, you’ve got to try this blueberry muffin recipe. If they last long enough to put in the freezer, that is.

The olive oil makes them super moist, and stay super moist at room temperature for days, not to mention adds a healthy dose of good fats. The Greek yogurt adds a punch of protein to help fill you up. And the whole wheat flour adds fiber and nutrients!

These muffins aren’t too sweet- there’s only 1/3 cup of brown sugar in the whole batch. The super sweet frozen blueberries help add natural sweetness (you can use fresh, too).
